Baci di Dama
- 140g hazelnut meal
- 140g of all-purpose flour
- 100g butter unsalted butter, at room temperature, chopped
- 100g caster sugar
- pinch of salt
- Chocolate spread for sandwiching the cookies together
Place the ground nuts into a bowl and add flour, butter, sugar, and salt. Use your hands to mix all the ingredients together until the butter is dispersed and completely incorporated. Read onto a bench for 5-8minutes or until the dough is smooth and holds together. If not, knead it until it does. Wrap and rest in the fridge for 20 minutes.
Preheat oven to 180ºC and line two baking sheets with parchment paper. Pinch of small pieces of dough the size of a marbled roll with your hands. Place them onto the trays and bake for 10-12 minutes or until the bottoms are lightly golden brown and set. Let the cookies cool completely on a wire rack.
Once cool, sands them together with chocolate spread and serve with coffee, milk or digestivo.
