Berry Crepes

  • 1 cup plain flour
  • 1 egg
  • pinch salt
  • 1 tsp vanilla extract
  • 1/4 cup sugar
  • 1/2 cup milk
  • 2 cups mixed berries
  • 200ml maple syrup
  • Butter for greasing pan and serving

Place all ingredients into a bowl and whisk together to a smooth mixture.

Heat frying pan and grease with a little butter,  pour a ladle of mixture onto a pan and spread mixture around the pan to a very thin covering.

Cook for approximately 2 minutes until browned then flip and cook for another 1 minutes. Then repeat for the remainder of the mixture

Serve with butter and mixed berries and maple syrup
