Spanish Ocean Trout Parcels

10 minutespre-heat oven to 180 degrees Celsius Place 2 pieces of foil on the bench, then top with baking paper Place 1 portion of ocean trout on each of the parcels. Add spices, olives, lemon juice, some of the herbs (save some herbs for later) Then top with a piece of baking paper then a piece of foil and seal off the parcels Cook in oven for approximately 10 minutes. drizzle olive oil and add some of the left-over fresh herbs to serve.
Ingredients:
- 1 pack Huon Salmon Ocean trout - 2 portions (skin on)
- 1 tsp smoked paprika
- 1 tsp chilli flakes
- Pinch salt
- 1/4 cup pitted green olives
- juice of 1 lemon
- small bunch coriander
- small bunch of parsley
- 4 pieces baking paper
- 4 equal sized pieces aluminum foil
- Olive oil for drizzling
