Upside-down Pineapple Cake

Ingredients:
- 125g butter
- 1c sugar
- 3 eggs
- ½ cup milk
- 1 ¼ c SR flour
- ¾ c brown sugar
- 1 tin of pineapple – including juice
- Cayenne pepper
Cream butter and sugar together
Add eggs and mix
Fold in flour and milk
In a high-sided frying pan (use a plan that can go in the oven) add brown sugar and juice and heat to a boil then simmer until liquid has halved. Then add pineapple and cayenne pepper
Add cake batter on top of the syrupy pineapple. Bake in the frypan for 25 mins at 180 degrees Celsius
